In person none of these exist; we will say so in the description if it may be otherwise. When it comes to a slicing knife or for use as a fillet knife, it simply doesn't get any finer than this. Of course, we think that once you get your hands on it and see what's capable of and how it looks in the flesh you will prefer to be buried with it.

Though its blade is whisper thin and highly flexible, it sacrifices nothing in terms of strength and ability to waferize whatever you use it to slice, from charcuterie to onion to tomato to smoked salmon. Made in what's known as the "Nogent style" for the city of the same name in France, this is, quite simply, one of the finest knives ever made for the kitchen on this planet, as anyone who has ever used one can tell you.

It was made in Thiers, France by Fortias, one of the oldest makers in that fine cutlery city's history and one of the companies that ultimately became subsumed into the Sabatier consortium. It comes in one of the most highly-desirable (and hard to find) sizes. Its blade measures 6.25", and the knife is 10.75" overall with a solid African ebony handle, bolstered with a white brass ferrule to provide some welcome reinforcement at this point of greatest stress. Though it has been used and sharpened it is rock solid and ready to work hard at the highest level right out of the box. There is a VERY minor hairline on its ebony handle, but this knife is entirely stable and will stay that way if not abused or soaked in water. In one key way, this knife is BETTER than when it was new, having been professionally edged for this sale to be RAZOR keen--far sharper than when it was new. The blade on this knife is carbon steel and is guaranteed to rust if not properly maintained. It incorporates a style and construction that is now nearly a lost art in cutlery, named for Nogent, the city in France where it was developed.

While the blade is entirely hand-forged with an integral bolster, as modern high-quality chef's knives are, hafting the blade to the handle required far more craft to build. It involves a rat-tail shaped tang piercing the handle, and collared at the bolster for added support. What makes this variety of knife so special, however, is its balance in your hand and its relative light weight, which enables it to speed through your workday in the kitchen like a long-lost sixth finger reappearing suddenly on your hand! Many people MISTAKENLY believe that the modern style is better. This couldn't be further from the truth.

Ask your own local French chef over the age of 50. Julia Child has written extensively about her love of these knives and they are VERY rare to find in any condition. I predict that the first-time user of this knife will be an instant convert. Its blade is made of superb carbon steel, which hones to a razor's edge in a way stainless never seems to achieve, with relatively easy honing. The blade was made LONG prior to 1987, when the company, like most major makers of fine cutlery, began in that year to switch to using recycled steel in its blades.

As such, it will not snap in mid-use (I've had several do it to me, including THREE by Henckels). A great opportunity for yourself or a lucky loved one's kitchen knives to take a giant step toward the sublime for its performance and another even greater giant leap because of this knife's condition, which is rare, to say the least.
