Please read our Terms below for details. PLEASE NOTE: We take our photos in natural light outdoors and as a result there are sometimes reflections or shadows or glare shown in the blades. In person none of these exist; we will say so in the description if it may be otherwise. This is a rare and beautiful piece of exceptional quality and is still quite beautifully preserved, hand-forged and crafted in a timeless style that is heavily influenced by the French. It was made in Sheffield, England by Harrison & Howson, one of that legendary cutlery city's more fabled makers, sometime during the reign of Queen Victoria, as evidenced by its blade markings which make reference to HER MAJESTY. Victoria died in 1901 so it's no newer than that.
Not bad for 117 years old! Harrison & Howson knives are among the finest ever produced in Sheffield, and they were at one time one of that city's largest makers of blades of every description. A closer look at some of its details shows that this knife was made at the height of the company's prowess. Like many other Sheffield makers, the company spiraled in decline for economic reasons and the quality of their cutlery suffered as a result, the company being forced to compete more and more with the cheap, mass-produced goods of Japan and other makers. This knife, though, pre-dates all of those woes and is a model of beauty, functionality and craftsmanship.
It is rare to be found in such solid condition, considering that the knife was probably used on a daily basis in some huge country estate's private kitchen or in one of the fine haute cuisine eateries of London. Like all fine knives, this knife has a fully forged blade/bolster/tang construction with a hidden, rat-tail tang piercing its gorgeous stag handle, capped at the pommel in iron.
When you use a knife like this, it feels like a solid extension of your hand, not some flimsy object that you're holding. It's superb aesthetics are matched by it's performance. This is the perfect knife for creating paper-thin slices of turkey breast, tomato, cucumber, onion or whatever you like and to that end this outstanding knife will outperform just about any other.
Best of all, we've had it professionally sharpened for this sale and it's now far sharper than when new--razor keen enough to thrill even the most jaded chef. It measures 13.25" long with 8.25" blade--just right for large hand or small. Condition is used but excellent; just looking at it one recognizes the hand of a master craftsman at work to create such a beautiful knife.Blade and handle are full and undamaged, ready to go to work in the most demanding of kitchens, professional or amateur; as you can see in the photos, there is a VERY minor check on its handle near the blade on one side but that's a natural expansion of stag, NOT damage! Like all carbon steel knives, it must be kept dry, even during use, but this minor inconvenience is more than offset by the superb edge maintenance and performance offered by carbon steel, as any experienced chef or butcher over the age of 50 can confirm. Whether you're an amateur or professional chef, you know how important the finest cutlery is to your state of mind while cooking. Here's your chance to relax and let your hands take over. And it's never too early to find the perfect gift for that hard-to-shop-for loved one! A beautiful piece for use or for display among a collector's finest cutlery.
