Made sometime in the late 19th or early 20th Century, this outstanding vintage meat cleaver is as rock solid and effective in use today as it was when first hand-forged in Solingen, Germany by J.Henckels, one of the world's truly great makers of fine cutlery, then as now. It's truly a work of the cutler's art, offered here in excellent condition with no problems of any kind. In one key way, too, it's BETTER than when it was new, having received for this sale a WICKEDLY sharp, professionally applied edge put on it by the good folks at Ross Cutlery in downtown Los Angeles, one of the best in the business. As such it's FAR sharper than it was when new and guaranteed to THRILL even the most jaded veteran user. It's one of the most handy and useful cleavers you'll ever see from this legendary German maker, made with a very heavy duty 6" x 3" blade that's capable of dispatching just about anything your kitchen can throw at it. Handles are African ebony of the finest quality, as warm to the touch as they are pleasing to the eye. It's 10.75 overall and weighs in at 18 ounces, which is quite a bit of cleaver for such a small footprint.
It's ready to serve a useful lifetime at work in your kitchen, butcher shop or meat locker, and whether you're using it to butcher game or livestock, or for all-purpose cooking, it's one of the most effective cleavers you'll ever use. It's very difficult to find knives of this vintage, though you'll certainly want to, since the handle is old-growth beechwood of the highest quality hafted over a full and tapered tang with some rather large and unusual birdseye rivets.
Beech is naturally slip-resistant, not to mention warmer to the touch and more beautiful than plastic and the blade was hand-forged from crucible cast steel (as was the norm prior to 1987) rather than from recycled steel stock, as is the practice today. The difference is real-I've had several contemporary knives SNAP in mid-use, but I've NEVER had a vintage one do it, and as a serious collector of vintage kitchen knives, I use the vintage ones in my own kitchen FAR more often.
A very slight amount of contaminant in recycled steel can be made quite evident under the stress of even normal usage. Its riveted ebony handle gives the knife a warmth and a feel you just can't duplicate with the plastic that dominates the market in contemporary knives.
