Henckels in Solingen, Germany, this is truly one of the most beautifully crafted knives ever for peeling and paring. It's an antique beauty that has everything going for one might ever ask in terms of materials, craftsmanship, conditon and most impressive of all, performance.

We're often asked for finer vintage carbon steel knives in smaller sizes, primarily because they're the hardest ones to find in usable condition, but this one should exceed the requirements of ANY chef. Hand-forged by its legendary maker sometime pre-WWI, it's just as good as it gets in terms of performance and looks better than most in the process. Measuring 7.5" long with a 3.25" blade, this is an rare and beautiful pattern for a Henckels knife compared with what's normally found. Look at how beautiful its carved horn handle is; notice the flared bolster. These are expensive, labor-intensive manufacturing steps, and it should be perfectly clear to anyone that this knife was made for someone of means.

In fact, it still is! It was made with a hand-forged carbon steel blade, pierced through with a rat-tail tang.

Condition is nothing short of amazing. Though its blade retains much of its original factory shine, it is carbon steel, not stainless, and is guaranteed to discolor normally with use, and to rust if not kept dry.

Condition is OUTSTANDING; handle has NONE of the hairlines that too often bedevil antique knives of this construction and there are no problems whatsoever. It outshines and outclasses anything in the modern marketplace by a country mile and will serve a useful lifetime if properly cared for (it has already outlived a few owners already). Even more than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, capable of waferizing anything put in its way.

Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it.

Knives like this usually become available only after being pried from the cold, stiff fingers of their dead owners.
