Please read our Terms below for details. This fantastic antique cleaver comes to us from Italy, half top-quality antique cutlery and half vernacular Italian folk-art. One needs only to take a peek at its rich, lustrous patina to recgonize, however, that this cleaver is MUCH older than that, dating probably to the mid-late 1800's or even earlier. Its somewhat Gothic outline is very consistent with older cleavers I've seen in Italy over the years, most of which were made not in any factory but by the local village blacksmith or sometimes even by the farmer or butcher who first intended to use it.Regardless of its manufacturing origin, there can be no disputing its sheer beauty and utility. Hand-forged from some very fine carbon steel, this incredible piece is as useful today as it was when it was first forged. In terms of its design, materials, craftsmanship and performance, it has EVERYTHING going for it one could hope and more.
In terms of condition, it's rock solid in every way with no problems of any kind--and it will stay that way if not abused. There is a VERY minor chip along the spine of its tang but it's nothing really--mentioned only in the interest of full disclosure. For the purpose of this sale we've had it professionally sharpened to a RAZOR's edge and it will now thrill even the most jaded user. The genius of the piece is that it enjoys considerable heft in the hand, thanks to its cast brass bolsters and pommel, but its blade is comparatively lighter in weight and can be used as a chef knife for finer work, even carving and slicing.
It's hand-forged blade was made with carbon steel that's expertly ground and gradually ground with a taper toward the cutting edge, making it as suitable for slicing and cutting meat as it is for your toughest cutting and boning and chopping. The handle of this piece is some kind of hardwood of the very highest quality, beautifully patinated with a silky smooth surface, and bolstered in solid brass and held firmly in place by copper rivets over its full tang. Most spectacular about it, though, is the seamless integration of the ornamental with the utilitarian, a reflection, perhaps, of the integral role that a nearly-spiritual respect for work played in the daily lives of our nearly-lost agrarian past--a VERY Italian trait.
This profound respect was often found expressed in the construction of the tools used to accomplish work, especially in the trades, to which butchers once belonged, and as such, the piece is as much folk art as mere craftsmanship in that respect, I think. I'm not one to put much faith in the talismanic power of inanimate objects, but this piece does tempt me to reconsider! Comes in a nice medium size for home or professional chef to use, measuring 12.5" long, 7.5" along the edge, 5-3/8 wide.
