With its RAZOR sharp carbon steel sheepsfoot blade, bolstered and inlaid in pewter atop incredibly fine (cattle) bone handles, it just commands the attention of anyone who sees it. Remarkably, its performance is equal to that beauty.
Hand-forged with a RAZOR sharp carbon steel blade, it's a superbly crafted piece on par with the best ever made. Condition is used but still very good as you can see, and the entire piece has a great patina, but still, it's ready to go to work in any kitchen or to shine in the center of any collection of fine cutlery. It just begs to be held. It was made sometime in the period of late 19th-early 20th Century, but even more than its beauty and age, the most remarkable thing about the piece, by far, is its performance in the kitchen.
It is a VERY capable paring knife, indeed, waferizing garlic and just about everything else you'll put in its way, peeling rings around other knives and the quality of its hand-forged blade enables even an inexperienced user to put the keenest razor's edge on it with relative ease. Like all carbon steel knives, it must be kept dry, even during use, but this minor inconvenience is more than offset by the superb edge maintenance and performance offered by carbon steel, as any experienced chef or butcher over the age of 50 can confirm. Treat her right, though, and she'll last another few generations of outstanding service.
Measuring 7.25" in length with a deft 3.25" blade, it's perfectly sized for peeling, paring and other utility work. You know how difficult it is to come by fine, smaller chef knives in carbon steel, since most knowing chefs won't part with theirs until they're dead of the knife is worn out.
