Unlike most, which were made with black composite handles or sometimes with ebony, this one was crafted with gorgeous old-growth mahogany rosewood of the highest quality, warm to the touch and just beautiful to behold. It was made in Solingen, Germany by Friedrich Herder, and is stamped with that name and and the company's spade logo. It was made FAR prior to 1987 (I'm guessing that it's from the early 1900's) from superior virgin steel, unlike the recycled stock used to make even the finest German cutlery today. Its fine carbon steel blade takes an edge FAR better than the overly hardened stainless that's on the market today and will never snap on you in normal use.
Condition is solid and tight with no cracks, chips or looseness on its handles, no problems of any kind. Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory.Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination. This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E.
