With an EXTRA-WIDE (2-5/8" wide), XXXL 13.25" carbon steel blade (it's 18.75 long overall), this is an exceptional find in every sense of the word: Old stock, yet brand new and never used, hand-forged in Thiers, France, a region noted for centuries for producing some of the world's finest blades. It even still has its original factory protective coating (of something like vaseline) to keep it from rusting in transit and storage, but this coating will wipe clean easily with a dry cloth or paper towel. This beautifully crafted knife was made by Thiers-Issard for Sabatier in their finest "Four Stars and an Elephant" line, as you can see in the photos. This knife was made from a vintage hand-forged blade that dates to the 1940's and 50's, then hafted in the 1970's, 80's and 90's--in this case, with the finest quality desert ironwood: beautiful to behold, warm in the hand and naturally repellent to water. Its carbon steel blade and hand-carved ironwood handles are exquisite.
Like all of the finest vintage Sabatier knives, this beauty is fully forged with integral blade/bolster/tang that extends the full length of the knife, with double-tapered blade and beautifully tapered tang for maximum balance. Its blade SINGS with long sustain when thumped with a finger or run over a steel; try that with a new knife by any maker. Despite it's obviously huge size, when you use a knife like this, it never feels heavy or awkward. It feels like an extension of your hand--not a mere object that you're holding--a Rolls Royce for the kitchen.It's superb aesthetics are matched by it's performance. You will not find a sharper, more functional knife than the older Sabatiers, and I challenge you to find a finer, faster knife for reducing a ton of something into a ton of something MUCH smaller. Best of all, it was made before Sabatier's 1987 conversion (along with the rest of Europe's cutlery industry) to the use of recycled steel for making blades. The difference is profound, and I have had several newer knives break on me under duress in the kitchen as a result.
This simply won't happen with this knife. Keep in mind, too, that the photos don't show it adequately at all since we've wisely left its factory coating of cosmoline in place to keep it sealed from ambient moisture; the cosmoline will wipe right off and any traces of it will disappear with soap and water. The knife underneath is pristine.
Many old-school chefs prefer to use a knife like this for each and every job in the kitchen to show off their superior knife skills! It's particularly well-suited, though, to reducing large piles of vegetables, herbs, fruits, meats, fish, and poultry into small and tasty piles of cleanly chopped, diced, minced, and chiffonaded ingredients for inclusion in your finest recipes. Its blade is also made to be flexible as well as strong, allowing it to be used succesfully as a slicer this is a true distinction among French and German knives, which tend to be clunkier, in terms of their feel.
