Please read our Terms below for details. PLEASE NOTE: We take our photos in natural light outdoors and as a result there are sometimes reflections or shadows or glare shown in the blades. In person none of these exist; we will say so in the description if it may be otherwise. This is an extraordinary knife that demonstrates American quality as equal to and often better than anything from Europe, not only in terms of quality but even in terms of beauty, which often comes as a surprise to the uninitiated. Its maker's markings are stamped into its fine rosewood handle, indicating it was made in Waseca, Minnesota by Herter's, produced through the late 1940's. Still, there should be no mistaking who made it; no one else produced a knife exactly like this with its contoured handle and long, clipped-point blade. Its blade was hand-forged from fine, virgin cutlery steel at a time when such attention to quality was the norm rather than the exception.
It has everything going for it one could hope to have in a chef's knife and more in terms of design, materials, craftsmanship, condition and especially performance. In addition to the superb quality of its carbon steel blade, its construction is world-class and rock solid. It makes an impression as big as its size, which is BIG--12.25" blade, 17" overall length.
In my esteem, however, the knife's single most desirable quality is the lightness, balance and speed that it enjoys in the hand, despite its rather large footprint. While it's quite sturdy and strong this is NOT a cuisine massive, one of those very heavy duty knives of this size but, a graceful giant that's capable of turning your inner demon loose in the kitchen, to the utter horror of onions, celery or anything else you need to chop fast and furious.
Professional chef and amateur alike could easily accomplish any job in the kitchen with it, including precision work of every description. It's been used but remains in superb condition, as the photos show, with a full blade and handle--ready for another lifetime or two of outstanding service. Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care--FAR sharper than when it was new.
In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination. This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E. Only a true carbon steel blade can consistently attain the razor-sharp edge that makes using it a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance!Whether you're a chef, collector or simply someone who appreciates fine cutlery for any purpose, here's an excellent opportunity to upgrade your arsenal with something singularly special for something you'll rightly come to think of as an heirloom.
