We picked this up as part of a much larger collection we acquired and it stood right out, not only because of its obvious beauty and quality, but also because it's unlike any other knife I've seen before--and that doesn't happen very often.
For some lucky user this will be the RIGHT knife. As evidenced by its blade markings it was hand-forged in pre-WWII Germany by Wusthof, and a better blade would be hard to find. It was made with integral blade/bolster/tapered tang construction, more lithe and finely wrought than most of its era. At some point in its history another owner decided to customize it into the gorgeous, Japanese gyuto-style chef knife before you.To do this they had to remove the large, birdseed pommel of its handle, which also served to lighten it considerably. Handle scales were replaced with some kind of rosewood that is quite beautiful and hafted over its full and tapered tang using some kind of unusual rivets I've never before seen--not quite mosaic pins but close. Because of today's craze for Japanese knives in the professional world of chefs I suspect the customization is relatively recent but it's impossible to know with any certainty. It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing. Having been professionally edged for this sale by Ross Cutlery in downtown Los Angeles, one of the best in the business, it is SCARY sharp now--far sharper than when it first left the factory and guaranteed to thrill even the most jaded user. The knife predates the industry's conversion from virgin steel to recycled and represents a level of craftsmanship and quality that are now lost to the economic realities of our age.

A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter.
Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
