Now THIS is a knife to get excited about and whether you're a user or a collector, if your heart isn't already racing you just might be dead! We picked this up as part of a much larger collection we acquired and it stood right out, not only because of its obvious beauty and quality, but also because it's unlike any other knife I've seen before--and that doesn't happen very often.

For some lucky user this will be the RIGHT knife. As evidenced by its blade markings it was hand-forged in pre-WWII Germany by Wusthof, and a better blade would be hard to find. It was made with integral blade/bolster/tapered tang construction, more lithe and finely wrought than most of its era. At some point in its history another owner decided to customize it into the gorgeous, Japanese gyuto-style chef knife before you.

To do this they had to remove the large, birdseed pommel of its handle, which also served to lighten it considerably. Handle scales were replaced with some kind of rosewood that is quite beautiful and hafted over its full and tapered tang using some kind of unusual rivets I've never before seen--not quite mosaic pins but close. Because of today's craze for Japanese knives in the professional world of chefs I suspect the customization is relatively recent but it's impossible to know with any certainty. It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing. Having been professionally edged for this sale by Ross Cutlery in downtown Los Angeles, one of the best in the business, it is SCARY sharp now--far sharper than when it first left the factory and guaranteed to thrill even the most jaded user. Wusthof, Dreizackwerk, Solingen, Germany, (with trident logo). The knife predates the industry's conversion from virgin steel to recycled and represents a level of craftsmanship and quality that are now lost to the economic realities of our age.

At 18" long with a 12.25" blade, it's more than enough knife for ANY chef yet weighing just 11.3 ounces it never once feels clunky or out of perfect balance. For anything from chiffonading a handful of fresh herbs to chopping up a 50lb.

Bag of onions, this knife will achieve the task with speed, grace and precision. In a welcome larger size, it's every chef's best friend in the kitchen, when it's time to chop, dice, and slice large quantities of vegetables, fruits, meats or anything else into neat, bite-sized morself for inclusion in your finest recipes. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one.

When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. Handles are excellent and uncracked--no chips, looseness or other problems of any kind.

The blade is full and undamaged, ready to serve a useful lifetime of dicing, chopping, slicing and generally making fast work of whatever you put in its way. The fit and finish of its blade and handle are what you should expect from one of Germany's finest cutlery makers and it really is much more beautiful than today's composite-handled equivalent. Whether you are a collector or chef, you'll instantly come to love this magnificent vintage knife as an heirloom. A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter.

Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
