Without a doubt, this is one of the Holy Grails of the knife world as well as the widest vintage French chef knife you'll ever come across in this size. Measuring 15.75" long with a 10-3/8" blade, it is a full 2.75" wide at the hilt--a draught much more commonly found on old Sabatier knives with a 14" blade.It was imported into this country, probably in the years shortly after WWII, by Bridge Cutlery, the legendary and now-defunct New York City distributor/retailer to the restaurant trade, and importers of some of the finest chef knives ever brought into this country. It bears only their stamp, and not any maker's marks, so there's no way to know exactly which company may have produced this knife, but my best guess would be the Jeune label, since they were using this kind of mahogany rosewood much more commonly at that time than most others (this is just an educated guess).
Apart from its unusual width, the blade is also a bit more heavy-duty than average, weighing 14.4 ounces, but sacrificing NOTHING in the way of balance and feel. Apart from it having won the genetic lottery of width and heft, this is otherwise the quintessential vintage French chef's knife, completely hand-forged from the finest virgin carbon steel with an integral blade/bolster/tapered tang and hafted onto gorgeouly dark mahogany rosewood handle scales using three brass rivets. Condition is outstanding and for the purpose of this sale we've had it professionally edged by the good people at Ross Cutlery, one of the best in the business, and it's now WICKEDLY sharp--far sharper than when it was new--and guaranteed to thrill even the most veteran user. Any chef can tell that this is the most useful and heavily relied-upon knife in any serious chef's kitchen, used most often at blinding speed to reduce something large into a pile of something a LOT smaller.
The extra width of the blade provides maximum clearance for your knuckles, permitting your fingers to stay where they belong--on your hand. Think of it as turbp-charging for your chef knife. By machine made from superior carbon steel, with a degree of quality that is simply not possible in the economic reality of today. Though its blade has discolored slightly with usage (As is normal--and it will rust if not properly kept dry between uses) this minor inconvenience is more than offset by the superior performance of carbon steel, which hones easier and sharper, providing the kind of authority with every cut that a chef deserves. Also unlike the contemporary knives of today, the knife has a slightly tapered tang, which provides it a measure of balance and "feel" that set it apart. Hold it in your hand and you'll immediately recognize a natural center of gravity in the center of your palm--where it belongs.
