Fabulous Boye-Francine Chef's Knife
This knife is a collaboration between legendary and innovative Bay-Ares knife maker, David Boye and artist Francine, who did the etching of the crane on one side of the blade. The blade has a six-inch cutting edge and is made from 440C "precipitated" 440C stainless steel using a process pioneered by David Boye - the only maker whom I know used this material. The handle is olive wood with an exceptional grain pattern. The bolster is cast integrally with the blade blank before finishing. All in all, it's a highly-collectible, but also highly usable piece of working art if you're a chef more than a collector.
The edge has recently been tuned up professionally by a master sharpener here in the Bay Area to bring it to optimal sharpness. It's a stunning piece from an amazing, and historic collaborations between two masters. I've tried hard to capture the condition and beauty of the knife, so please use those images to judge the condition for yourself.
