By virtue of the sheer numbers produced in France when knves like this were still being produced, there is the greatest likelihood that it was produced by one of the Sabatier companies, but just about every maker produced one very similar, so there's no way to know for sure. It also has a very sturdy blade but that is still not enough to ID it for certain. It was made in a style that was once a staple in French vintage chef/butcher cutlery, and though it may appear modest at first glance, this little baby is a wolf in sheep's clothing in terms of its performance.
Like all fine carbon steel blades, it will discolor normally with use and is guaranteed to rust if not kept dry during use, but this minor inconvenience is more than offset by the superior performance it enjoys--a WORLD of difference over the stainless steel so ubiquitous in the modern market. With its PURELY French design, solid fruitwood handle (probably pearwood), birdseye rivets and RAZOR sharp carbon steel blade, this beautiful knife is hand-forged in a design that has LONG been favored by the French chefs and butchers for its versatility, ease of maneuverability and comfortable grip.It dates most likely to sometime in the early 20th Century (knives of similar design can be found in French paintings dating back to the Middle Ages), but regardless of its exact age, its performance and quality are timeless. Multiplying that performance considerably is the fact that we've had it professionally sharpened for this sale and it's now RAZOR keen in a way that very few knives ever can be. The knife has a razor-sharp 6.5" blade and measures 11.75" overall--a size that makes it absolutely perfect at boning and trimming meats, and any chef's dream-come-true utility knife. Handle is in equally fine condition with no cracks or looseness at all. If you've never used a traditional French butcher knife like this before, you're in for a treat. Its carbon steel blade takes a razor's edge easily, unlike today's overly-hardened blades, which nearly require you to be a blacksmith to re-hone.
