Large enough to be used as a slicer or boning knife and small enough to be used for peeling and paring, this antique beauty has everything going for it in terms of materials, craftsmanship, conditon and most impressive of all, performance. We're often asked for finer vintage carbon steel knives in smaller sizes, primarily because they're the hardest ones to find in usable condition, but this one should exceed the requirements of ANY chef. Hand-forged in Solingen, Germany by the J.Henckels company, probably between World War I and World War II, it's just as good as it gets in terms of performance and looks better than most in the process. Measuring 8.75" long with a 4.75" blade, it was forged with an integral blade/bolster/tang steel-pinned over a tapered tang with what I believe are palisander handle scales that are as warm in the hand as they are easy on the eyes. Just look at it--a thing of beauty, leaving no doubt exactly what kind of performance it's capable of, too. Condition is used but excellent, as you can plainly see. Though its blade retains much of its original factory shine, it is carbon steel, not stainless, and is guaranteed to discolor normally with use, and to rust if not kept dry.
It outshines and outclasses anything in the modern marketplace by a country mile and will serve a useful lifetime if properly cared for (it has already outlived a few owners already). Even more than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, capable of waferizing anything put in its way.Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory.
Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it.
