Known alternately as a rib-splitter or sometimes as a poultry cleaver, it's the knife you want to reach for when you only want to reach once. I assure you, whatever it is that you may need to divide in half with it, will be permanently divided in half on the first try. It is a VERY substantial piece, to say the least. It's also remarkable for its condition.Blade is full and RAZOR SHARP, having been professionally edged for this sale by Ross Cutlery in downtown Los Angeles and now far more sharp than when it first left the factory. Its handle scales are fine, old-growth rosewood hafted over its full and tapered tang with brass. Just look at it: a thing of absolute beauty that's 100% rock solid in every way and ready to go to work at the very highest level right out of the box. It is even more beautiful than the digital photos make it look, even though it looks pretty good already. It was produced in Greenfield, Massachusetts by Nichols Bros. No later than the early 1900's. Though it has some considerable collector value, it would be a shame not to use it, if you're able. Carbon steel blades of this vintage can hold a razor's edge (it has a RAZOR sharp edge now) like no other and are easier to maintain, as any veteran chef or butcher can readily confirm. To say the least, it can do more than its share of butchering of game or livestock. Its ironwood handles are as warm and comfortable in the hand as they are easy on the eye.
Comes with 8-3/8" blade (13.5" overall length) and weighs in at a very impressive 20.4 ounces--not overly heavy but a LOT of heft for such a relatively compact piece. If you're simply collecting butcher knives, you're in luck--this is a rare opportunity to add some authenticity and quality to your collection with a piece that user and collector alike will instantly think of as an heirloom and something they'd be proud to pass along to future generations.
