In terms of quality materials and construction--and especially beauty--it's superior to comparable designs by Henckels, Wusthof and others. For example, the knife was forged from crucible cast carbon steel rather than having been stamped mechanically from recycled steel, as has become the practice worldwide since 1987.

The difference is profound: I've had several post-1987 knives snap in mid-use, but it simply won't happen with this outstanding blade. Though it shines like stainless steel, its sharp sheepsfoot-style blade is carbon-steel--beautifully pointed and ground in the shape of what's also sometimes called a "produce knife, " "vegetable knife, " "melon knife" or just butcher knife. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance!

It's shape makes it ideally suited for precise, tough cutting, when used almost like a carpet knife, with the point down and drawn with pressure at the point. For fruit or vegetables with a tough rind, like pineapple, pumpkin and others, there is none finer. Trimming steaks is a breeze with such a knife and I'm sure you'll find a multitude of applications for it. And NOTHING will make faster work of game or livestock, if you're butchering your own.

The blade allows for perfect and sure cutting on a single stroke--every time--and has numerous uses in any gourmet kitchen, amateur or professional. Condition is used but rock solid in every way with no problems or damage of any kind. It has a full blade, steel-hafted onto a gorgeous old-growth beechwood handle that's beautiful and warm to the touch, made in a kind of rounded, pistol-grip shape.

This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. Measures 13.5" long with an 8.5" blade.
