The L'Enfer works were known in French as "the hollows of hell" because they consisted of an early 19th century factory with hundreds of hand-forging stations, in which temperatures often exceeded 100 degrees. As such, their logo was the devil, in several variations. To avoid conflict with fire and brimstone types over here, they often used other logos for their knives, or just the word "L'Enfer, " as this one did.
What is beyond dispute or uncertainty, however, is the litheness and balance of the piece which just continue to astonish me every time I use my own L'Enfer knives--just remarkable in every way. The real market for this knife won't really be needing much further introduction anyway. I should point out that the knife is razor sharp, as it was when we took it in trade. An heirloom-quality piece that will, if properly maintained, feed the appetites and imaginations of generations to come.A WORD ABOUT MAINTENANCE: Never use a dishwasher. Never soak the knife even briefly, as the antique wood of the handle will split from expansion. Wash the knife by hand and wipe clean and dry immediately thereafter. Wipe the knife clean when using it on wet or acidic foods.
It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
