This is a rare and beautiful piece of exceptional quality, made in the late 1800's-early 1900's in Sweden by Jernbolaget. There are few words which adequately describe its performance more than just plain Wow!Balanced, strong and RAZOR sharp, it's a dream in the kitchen, and there is nothing finer for chopping, mincing, slicing and otherwise reducing foods of every description from large piles to small piles for inclusion in your finest recipes. It was expertly hand-forged with African ebony handles over a full tang with clad bolster and pommel made of pewter, very much in a French profile. It does so, however, with a slightly squared off ferrule at the bolster and a much thicker and more substantial handle than most French knives were given.
The great deal of labor that goes into this design favors, in my humble opinion, true craftsmanship and beauty in a chef's knife. If you're someone who knows the FEEL of fine knives, you won't have to use this knife twice to understand what it's capable of, and you will experience nothing short of a revelation of performance. Like all fine vintage carbon steel knives, it will rust if not carefully kept dry during use, but you'll be richly rewarded for your trouble with superior performance. Carbon is also easier to rehone and does not require a blacksmith's skills to achieve the finest possible edge.
Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Condition is excellent and its African ebony handle is entirely free of hairlines, looseness or other problems, which is rare in many fine older knives like this. Here's your chance to acquire what you'll rightly come to think of as an heirloom.
