Originally designed for preparing fugu (blowfish), the improper preparation of which can easily result in death for the customer, the fuguhiki is pointier, more slender and just a tad sharper than the yanagi, which is a more general-purpose sashimi knife. Many of the world's rock-star sushi chefs prefer a fuguhiki for all of their work, but whether you're buiying for part-time or full-time use, you're in for the ride of a lifetime.

This knife shares all of the hand-wrought attention to detail that has kept Kikuichi knives at the forefront in Japan for over 700 years, but the amount of labor required to produce the thinner blade is actually quite considerable. The white steel of this knife is just slightly softer than a blue steel knife and accordingly, is easier to work which is why the best white steel knives are preferred by most elite professional chefs.

This knife also has a slightly smaller footprint but it is anything but small, made with a 12" blade that's 1-3/16" wide and 3/32" thick (knife is 17.75" overall length), painstakingly hand honed at the factory to an edge that is beyond razor sharp, and sheathed in its matching wooden saya, which locks by virtue of a dowel. Saya is ho wood, like its octagonal handle, which is hafted onto the tang of blade with a genuine horn bolster. It comes to you brand new, never used, in its original box with all papers..
