In every respect, it's a beautiful piece of exceptional quality, made in the traditional style of a classic Sabatier French chef's knife, and exemplifies the perfection of that icon in every detail. It dates from sometime in the late 1940's-50's and was made at the height of the company's prowess, equal to any the company ever produced. Today the company is called Alexander, but they still make fine knives in Maniago, Italy's Solingen, Thiers or Sheffield. They no longer make carbon steel knives, but their prices are astronomical compared to other European makers.
Italian chef knives in general, and Coricama specifically, were not imported widely into the United States, due mostly to their higher prices and consumers' unfamiliarity with the brands, but in Italy and throughout Europe, Coricamas are WIDELY prized for their superb hand-forged blades and incomparable craftsmanship. Its hand-forged blade and ironwood handles make for a beautifully balanced knife, that's offered here, as you can see, in used but still excellent condition, with full, razor-sharp blade and unblemished handles. In one key way, too, it's BETTER than new, having been professionally edged for this sale by the good folks at Ross Cutlery in downtown Los Angeles, one of the best in the business.
As such, it's FAR sharper than when it was new and FAR sharper than most knives ever can be--guaranteed to THRILL even the most jaded user. Stamped markings on the blade reads, "HAND-FORGED, CORICAMA, ITALY, " with their logo inside a triangle of a blacksmith pounding steel against an anvil with both hands. Handle, too, was originally emblazoned with this logo inside a circle, though these handle markings have grown quite faint with the passing of the years and the touch of many hands. The handle is a deeply and darkly patinated ironwood, ideal for chef's knives for its dense and oily water-resistance and its durability.
The knife had been superbly maintained by its former owner, a retired chef. It was always kept with a bit of mineral oil and it really shows, with a deep lustre that is simply spectacular. When you use a knife like this, it feels like an extension of your hand--balanced, and natural--not a mere object that you're holding, and you soon learn that its aesthetics are matched by it's performance. This is the perfect knife for a wide variety of kitchen tasks, and is, for many old-school chefs, the only knife you'll ever need.
From creating thin slices of turkey breast, tomato, cucumber, onion or whatever, to reducing large piles of your garden's freshest herbs into small piles of aromatic goodness, this outstanding knife will outperform just about any other. Notice that the knife incorporates the slightly elongated, rounded French bolster, which allows your fingertips to achieve maximum contact with the knife for better control than its German counterparts.If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Best of all, though, is that it was made prior to the conversion in Europe from using virgin steel to recycled steel in the manufacture of finer knives. As a result, it's FAR less likely to break from embrittlement and will take a finer edge with much greater ease. Also nice is the size of the piece, measuring 15.25" long with 10.25" blade--the quintessential chef knife size, able to tackle big jobs but agile enough to handle the occasional clove of garlic. By any measure, this is a beautiful piece for use or for display among a collector's finest cutlery and one you'll rightly come to treasure as an heirloom.
