This outstanding carbon steel chef knife is one of a small supply of knives which we obtained as part of the remaindered inventory of a knife shop that went under here in Los Angeles about 35 years ago, so it is at least that old, though has NEVER been used. We can't call them new, though, because they'd acquired some rust in storage and we have had them professionally rehabbed and re-edged by the good people at Ross Cutlery in downtown Los Angeles--the best in the business.

They were labeled in their boxes only "WH, " and "JAPAN, " and we haven't been able to learn anything about their maker but we've certainly learned from them exactly what a beautifully crafted knife like this is capable of in the kitchen; I've used one like it for over 20 years and will never part with it. Offering unmatched performance, this knife is substantial enough for any job--almost as sturdy as a cleaver, weighing in at 11.4 ounces--yet still beautifully balanced in the hand and deft enough to permit the speedy dispatch of any kitchen's most demanding and delicate chopping, dicing, and slicing tasks--RAZOR sharp and ready to rock.

It is truly one of the most remarkable knives you'll find in any chef's collection of cutlery. But what you can't really appreciate until you have it in hand, is exactly how WELL it was executed. The result is a chef knife to be reckoned with--world-class in every way--with performance and "feel" equal to the finest quality kitchen knives ever made. It possessess an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory.

Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. We often have our knives professionally edged to achieve this kind of edge but in this case, this razor sharpness was provided by the maker himself. Handles were made from tight, beautifully-grained hardwood of some kind and triple-riveted over a full and tapered tang, sculpted perfectly to fit the hand. It's beautifully balanced, and as warm and comfortable in the hand as it is pleasing to behold.

You will, after one or two uses, soon agree that such a knife is indispensable to any serious chef. If you've used carbon steel knives before, you know the delight of using one. If not, you're in for a most pleasant surprise. They take an edge much more easily and do not shatter like their stainless steel relatives especially Henckels! I've lost 3 this way.

And outperform in almost every way. You must wipe them down after each use but their beauty (it's much nicer in person than the digital pix make it appear) and superior performance are worth it. The blade on this knife was purposely left looking a little rough to accent its hand-forged origins--the effect is known as a "forge finish, ".

And it also has the function of retarding rust. The knife will gain a patina, as is normal, but it will do so more slowly than most carbon knives.

This intentional aesthetic appeal to its medieval Japanese roots, while simultaneously employing some of the most sophisticated cutlery steel ever formulated (by hand, in small batches, like a fine boulliabaise) is, in itself, a characteristically Japanese approach that fully embodies the spirit of art as much as craft. The fit and finish of its blade and handles is exquisite, and it would be difficult to overstate its quality--as is the pleasure that a trained hand will experience in its usage. It measures a VERY handy 10.75" long with a sturdy 7.25" (as measured along its cutting edge) by 3 blade.

It performs even better than it looks and as the photos show, it looks pretty darn good! Don't pass up an opportunity to truly elevate the quality of cutlery in YOUR kitchen, amateur or professional.
