You may have never heard of Gustav Emil Ern's knives before but in Germany and throughout the rest of Europe they were one of the best-known (and definitely one of the most expensive) brands of knives among professional chefs, butchers and others who value the finest cutlery.
Sadly, they're also a company whose commitment to quality over marketing led to their demise and the company is now defunct. Their knives were made in Solingen, Germany and have a meat-cleaver stuck into a butcher's block as their logo, which can be found stamped, not etched on the blade of this particular knife, indicating that it's an older Ern piece, and entirely hand-forged. With its 8.5" blade (measures 13.5" overall), it's stamped, GUSTAV EMIL ERN, SOLINGEN - GERMANY. This is an outstanding, hand-forged knife made from the finest quality virgin carbon steel and predates by decades the company's conversion in 1987 to recycled steel, markedly superior to today's modern German knives.A profound one, and I have had several newer knives break on me under duress in the kitchen as a result of the presence of a VERY minute amount of contaminant in the steel which cannot be eliminated 100% during recycling. This is the downside of what can happen when you recycle Hyundai's into knives. This simply won't happen with this knife. If you've never used a carbon steel knife before, you're in for a treat.
Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Notice how the tang of the blade extends all the way through the handle without ANY gaps or spacing between the steel and the handle scales? It also tapers toward the bottom for greater balance, which you'll feel every time you put it to use.Handles are solid ebony, warm to the touch and easy on the eyes, entirely free of the hairlines that too often bedevil vintage knives. Hand-carved ebony handles are exquisite--warm to the touch and as beautiful to look at as it is comfortable to hold. It's superb aesthetics are matched by it's performance. You will not find a sharper, more functional German knife. It's particularly well-suited to reducing large piles of vegetables, herbs, fruits, meats, fish, and poultry into small and tasty piles of cleanly chopped, diced, minced, and chiffonaded ingredients for inclusion in your finest recipes.
