Please read our Terms below for details. Yup, we didn't think so. Without a doubt, this is one of the finest slicing knives you'll find at any price. If you're like me, you want a slicing knife that is long, comfortable in the hand with exceptional balance, with just the right balance of stiffness and flexibility and RAZOR sharp. Not only does this knife fit the bill on all of those counts, but it does so in spades the spade just happens to be the logo of this maker--not a bad segue, if I may say so! It was forged by hand in Solingen, Germany by Friedrich Herder and Sons, who were, in my humble opinion, the finest of all the now-defunct German cutlery companies (the Herder name has been reborn but their wares no longer have the grandeur they once did). It's an older piece in superb conditon and is RAZOR sharp in a way that modern knives never are, and full of the kind of expensive, labor-intensive details and quality that ultimately contributed to the demise of this once-dominant maker. Most knives of this size and style are MUCH heavier, but this one weighs in at a mere 7.4 ounces. It measures an incredibly long 17.75" with a 12.5" blade and is capable of a WORLD of possibilities that modern knives can't manage, even in the most skilled hands.

When used on turkey, roasts, hams, onions or anything else, you'll find that it shaves thinner slices than you previously may have thought possible. Yes, it is that good, and in a word, using it is a JOY. And all the while this singular knife is outshining all the rest in performance, it's also a piece of quite breathtaking eye candy, as well. Unlike today's mass-produced, hot-drop forged blades i. By machine, it enjoys a fully hand-forged blade with integral bolster and tapered tang, made from superior virgin carbon steel.

As such, it is quite superior to that made today by any but the most demanding custom cutlers. I estimate the age of the piece as sometime between the world wars, as evidenced by its spade logo. Handles are rosewood of the finest quality, warm to the touch and easy on the eyes. A collector's piece though it is, it would be an utter shame not to use it daily. Thogh it retains its original factory shine, the blade is made of beautiful carbon steel, not stainless, and will hold a razor's edge with relatively easy honing. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! If its huge length and shark-like profile weren't intimidating enough, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches--you can literally shave your face with it. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory.

Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it. An instant heirloom for even the most discriminating user or collector and something you'll rightly be proud to pass along to your heirs.
