Listen: this is one of the most difficult carbon steel knives to find by ANY maker in ANY condition, and it's being offered here made in Germany by Wusthof--one of Germany's most outstanding makers in SUPERB condition, in a most highly desirable XXL size.

It bears the mark of Hoffritz, its retailer here in the USA, but there's no doubt it was made by Wusthof and we fully guarantee its pedigree Hoffritz was a design-only company, contracting its manufacturing to a large number of companies around the world. If you value the finest vintage cutlery for yor kitchen, do NOT let this one go. Measuring 17.25" long with a 12-3/8" blade, which leans forward, toward the edge JUST a bit to give more leverage on each stroke, it's the ULTIMATE slicing knife, ideal for turkey, ham, roasts, salmon, onions, tomatoes or anything else unlucky enough to get in its way.

With its extreme flexibility, it's also the CONSUMMATE fillet knife for fish. This exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination.

This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it. We also believe you'll soon come to think of it as an heirloom.

If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and fully lives up to the outstanding reputation of that German knives used to enjoy before the age of robotized mass production.

Hand-forged long ago in Solingen, Germany (I'm estimating 1940's--50's), it's a superb representative of the company's ability to produce some of the finest knives ever made for the kitchen. The blade is forged from pure virgin steel (as was the norm prior to 1987) rather than from recycled steel stock, as is the practice today. The difference is real-I've had several contemporary knives SNAP in mid-use, but I've NEVER had a vintage one do it, and as a serious collector of vintage kitchen knives, I use the vintage ones in my own kitchen FAR more often. A very slight amount of contaminant in recycled steel can be made quite evident under the stress of even normal usage. This is an especially critical consideration in THIS knife, due to the fact that a flexible knife is often called upon to FLEX, putting tensile stress on the blade. The knife also has design details that no longer exist in Wusthof, Henckels or any other German makers' wares.

Notice how the tang of the blade extends all the way through the handle, and the way the tang grows VERY thin as you get closer to the butt of the handle AND towards the tip (a feature called a "feathered tang")? Notice the extreme taper of the spearpoint tip? When you hold a knife like this it truly feels like an extension of your hand, not like something you're simply holding. As the photos show, it's remarkably well-preserved, with full blade, undamaged ebony handle--warm to the touch as as comfortable as it is beautiful. Whether you're an amateur or professional chef, you know how important the finest cutlery is to your state of mind while cooking.
