Lee Valley contracted with several makers to put handles on those blades and this is one of the more astounding cleavers they offered as a result. A finer specimen of the form would be hard to find, too.Though it was forged in France this style is known widely. They're not made at all these days because the up-curving blade requires extra hand-finishing (and honing--it's sharpened all the way around to the point at top of blade to permit chopping, slicing AND scraping in a push motion) and uses a much larger piece of expensive blade-stock. It's shape makes it as adept at slicing and cutting meat as it is for your toughest cutting and boning and chopping. It's size is deceptive, and it is much more maneuverable and agile than you might think, despite the fact that it weighs an impressive 29 ounces and measures a whopping 14.25" long with a VERY sharp blade that's 10.5" long and 5 wide at its widest. It has been used but not much at all and condition is excellent, ready to go to work in even the most demanding professional.
Kitchen right out of the box. It's a beautifully balanced piece and that balance makes it suitable even for finer mincing and dicing. It comes with a hand-forged carbon steel blade that bears the elephant and 4-star logo of Theirs-Issard, and there is no surer sign of quality in vintage cutlery. As with all carbon steel knives it must be kept dry to prevent rusting but this minor inconvenience is more than offset by the superior performance delivered by carbon steel, as any veteran user can readily confirm. Handles are nearly indestructible black composite, triple-riveted over the full-tang with the classic French bird-head pommel.
