With exotic beauty and maximum functional quality, this is simply one of the finest knives of its kind ever made and without a doubt one of the oldest we've yet been able to offer. We didn't think so. We date it to the period of 1830's since its blade markings show that it was made during the reign of Britain's King William IV, who ruled from 1830 to 1837.

There is no maker's name on it but that was far more prevalent at that time in the earliest days of the Industrial Revolution. If we had to make an educated guess we'd say there's about an 80-90% chance it was made by Wm. Greaves and Sons, one of Sheffield, England's most storied makers of fine cutlery, whose legendary razors are more well-known than their kitchen cutlery, but not more impressive. In terms of craftsmanship, condition, materials and utility, it is superb. We're often asked for finer smaller kitchen knives in carbon steel, primarily because they're the hardest ones to find in usable condition, but this one should exceed the requirements of even the most delusional chef. Blade was hand-forged with integral blade/bolster/tang construction, it possesses the kind of superior steel that made Sheffield famous. As you can see in the photos, it is just incredibly well-preserved, from point to pommel.

Even more striking than its blade, I think, is its (bovine) bone handle scales, which are surprisingly well-preserved. The bone was selected not only for its beauty but also for its tightness of grain, which is affirmed by the very fact this knife is still looking great well over 175 years after it was made! To find this knife in any condition is nothing short of RARE and to find it in this condition is nothing short of amazing.

It is fully intact, rock solid in every way. It outshines and outclasses anything in the modern marketplace by a VERY wide margin, and if cared for properly, will probably outlive its owner and then some. Even more than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen.

It is a VERY remarkable knife, indeed, waferizing anything you'll put in its way. Measuring 7.5" in length with a RAZOR sharp 4" blade, it's most obvious applications would be chopping, dicing and mincing yet it's also lithe enough for peeling, paring and any of your kitchen's most demanding precision work. Waferizing an onion in a snap or performing a small chiffonade without skipping a beat?

Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it. You know how difficult it is to come by fine, smaller chef knives in carbon steel, since most knowing chefs won't part with theirs until they're dead of the knife is worn out.
