It was made in a rare configuration with an especially thin and narrow blade, hand-forged with an integral blade/bolster/tang construction, all made from a single billet of the finest German carbon steel. Handles are exquisite ebony, as warm in the hand as they are easy on the eye, triple iron-pinned over its full and tapered tang, all offered here in superb condition and in one way BETTER than when it was new, having received for this sale an expertly applied RAZOR's edge thanks to the good people at Ross Cutlery in downtown Los Angeles, the best in the business. As such it's FAR sharper than when it first left the factory, guaranteed to THRILL.

THIS is the kind of Henckels knife that will shame the craftsmanship in anything found on the market today. Its single most outstanding feature is the unbelieveably fine forging of its blade, which tapers to whisper thinness in a way that NO other Henckels chef knife you've ever seen does, yet sacrificing nothing in the way of strength or performance. THIS is the very essence of craftsmanship in a hand-forged knife and I promise you that the man who created this specimen was a long-time master using his arm, his hammer and his expertise, not some hungover, semi-skilled factory worker operating an automated pneumatic hammer, as is the case today. Measures 13" long with a 9" blade but in terms of its balance and feel in the hand, it handles like a much smaller piece. There is no finer compliment. If you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding, and there is nothing you can't do with it. The blade is stamped, J. Henckels Twinworks, Solingen, Germany, " with an additional stamp reading "Grand Prize, Paris 1900. And while this knife offers some exceptional collector's value it's no mere pageant winner; it's very much still ready to serve a useful lifetime of carving, slicing and generally making fast work of whatever you put in its way--an amazing fillet knife, as well.

You might not be aware that Henckels knives began to use recycled steel stock in 1987, but this knife was made from virgin steel many, many years prior to that, at a time when the company was fully worthy of their near-legendary reputation for excellence. The difference in quality may surprise you. It's what you should expect from one of Germany's finest cutlery makers and it really is much more beautiful than today's composite-handled equivalent. Whether you are a collector, a professional or amateur chef, or just someone in need of a finer carver/slicer, you'll instantly come to love this magnificent, heirloom-quality vintage knife as one of your very favorites. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly.

I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
