This was something of a small-scale trend in the late 1800's/early 1900's, at which time several American makers experimented making knives in French shapes and some even calling them Sabatier knives in their catalogs and other sales literature. Other American makers at the time were using French-made blades and assembling them here in the USA for sale under their own labels.
This knife was made in Northampton, Massachusetts by the Northampton Cutlery Company, one of America's legendary makers of very fine cutlery, mostly sterling and silver-plate, but just a few of their kitchen knives--like this one--are among the world's finest. Blade is hand-forged carbon steel of the highest-quality, sturdy and strong but tapering wafer-thin at point and pommel, still stiff and strong in its forward few inches--a HIGHLY desirable trait in any knife.
In fact, this quality of being thin yet still stiff and strong is the very essence of excellence in forging. It was made with an integral bolster and full, tapered tang, hafted with three iron pins using African ebony of the finest grade. Condition is nothing less than superb, as you can see, and for this sale we've had it professionally edged to a RAZOR's edge, guaranteed to out-perform anything on the modern market, thrilling even the most jaded user in the process. It's the ultimate chef knife for every conceivable application but is primarily used for lighter-duty chopping, dicing, mincing, slicing, etc.
For any chef with a petite hand, however, this knife is nothing short of a godsend. It was made in a VERY handy smaller size, measuring in at 11.25" long with an 6.25" blade. Even at this smaller size, though, its light weight is remarkable: just 3.9 ounces. Its handle is on the slender side--a blessing for anyone with a smaller hand and perhaps not quite so desirable to anyone with a larger one.
