This superbly crafted chef's round-tip slicing knife was made years ago in France by Sabatier, from their premium and long-ago retired Chef Au Ritz line of knives. It's a rare profile in a highly desirable XXXL size, measuring 17-1/8" long with a 12.25" blade that is 1-3/8 wide.
It dates to the mid-1900's in Thiers, the knife-making capital of France. As such, the knife was hand-forged from crucible cast steel rather than from recycled steel, as has become the practice worldwide since 1987. The difference is profound: I've had several post-1987 knives snap in mid-use, but it simply won't happen with this outstanding blade. Its numerous uses in any gourmet kitchen, amateur or professional only multiply its value, and whatever tasks you may put it to will multiply your satisfaction with it. With a single stroke, it's capable of carving or slicing whatever is foolish enough to get in its way.
Will shave PAPER-thin slices of turkey, roasts, hams or anything else, and its rounded tip is perfect for serving from a carving station. The piece enjoys an extra measure of refinement, and it would look appropriately spiffy at even the most refined table.
Handles are the finest, darkest, old-growth rosewood--free of cracks or any other kind of problem. It's been used but its conditon overall is excellent, as you can see in the photos.
