This is one of those all-too-rare knives that are so outstanding that it's difficult to know where to even begin in describing it. The knife is stamped, GEBR. WEYERSBERG, SOLINGEN, along with this maker's bugle logo but despite this very British marking this knife is 100% of German design and manufacture, which is somewhat odd because the majority of those I've seen like it in the past (including those in my own collection) were invariably made in France (usually made by the maker Batisse, whose logo was a crescent man-in-the-moon, later absorbed into the Sabatier consortium). This provenance, however, should be of a distant second priority as compared to the truly remarkably beauty, quality and condtion of this fine piece.
This is a superb and rare old slicing/carving knife, in even rarer superb condition, as you can see. It was hand-forged with a stiff and strong carbon steel blade that measures a comparatively petite 7.25" (the knife is 11-7/8" overall) and has some very nice filework along its spine, as well as a long false edge; machining the blade in these ways was not purely ornamental but was done to perfectly balance the knife by lightening its blade just a bit.
THOSE were the good old days when quality and craftsmanship came FIRST! Hafted onto its full and tapered tang are some of the most sumptuous (bovine) bone handle scales ever seen, mounted with iron-inside-brass birdseye rivets and bolstered at both ends of handle in brass.
A valued collector's item though it certainly is, it would be an utter shame if such a fine knife were not to find some use. As you can see from the photos, it is just a stunning knife, having been smoothed over by the passing of many years and the touch of many hands, giving it a lustre and patina that are just incredible. Of course, the knife is great for far more than just showing itself off. Its blade is RAZOR sharp in a way that most chefs have never seen--one could literally shave a man's face with it. Used as a slicer or butcher knife, it's fully capable of trimming and cutting meats or anything else, and you'll find that its fine carbon steel blade will take and keep a keen edge unlike anything in stainless steel.
It will continue to deliver a lifetime of outstanding service in any kitchen, amateur or professional, equal in performance to its beauty. The blade and handles are free of any cracks or looseness (rare for this kind of knife, especially considering its age).
Its edge is convex, not concave, like a bayonet, and this kind of cutting geometry is capable of taking a SCARY sharp edge, which it already has. Please be very careful when using it. When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding. If you've never used a carbon steel knife before, you're in for a treat.
