I recommend this one to the chef who's looking for greater heft; it's a thicker blade and knives like this definitely have their fans, so come and get it, boys! Known in France as a "cuisine massive, " or as a "chef de chef, " this outstanding carbon steel chef's knife is substantial enough to split the toughest leg and/or hip joints of a fresh carcass, yet still beautifully balanced in the hand to permit the speedy dispatch of any kitchen's most demanding and delicate chopping tasks. This singularity of purpose in the kitchen represents an entire "one-knife kitchen" philosophy still embraced by many old-school chefs brought up in the traditions of the French Ecole Ritz-Escoffier. Tortuously apprenticed in this tradition know the true value of such a knife and become quite passionate in putting forth their argument as to why it's the only knife any true chef will ever need. The old guys also love ANY opportunity to show off their knife skills. Whether you ascribe to that philosophy or not, you will, after one or two uses, soon agree that such a knife is indispensable to any serious chef. If you've used carbon steel knives before, you know the delight of using one. If not, you're in for a most pleasant surprise. They take an edge much more easily and do not shatter like their stainless steel relatives and outperform in almost every way. You must wipe them down after each use but their beauty and superior performance are worth it. Blade and handles radiate with a depth and lustre that come only from the touch of many hands and the passing of many years. The fit and finish of its blade and handles is exquisite, and the entire piece is even more lovely in person than the digital pix make it appear, and it looks pretty darn good alreay. Like all fine knives, this chef's knife has a fully hand-forged blade with flared, integral bolster, and full-tang triple-riveted in brass onto wooden handle scales, which are made of the deepest, darkest, rosewood--just incredibly beautiful.

These handles give it away as a piece that was almost certainly made by Utica, in upstate NY, and even though its blade markings are no longer visible there's no disputing the maker. Though I don't know exactly how old the knife is, I do know that no one has made knives in this style for well over 45 years. This style of knife has always been MUCH more popular with the French than it ever was in the US, but the U.

Military, as the overwhelming majority of those I've seen were. It measures 17.5" long with a strong and sturdy 12-3/8" blade, 3/16 thick at the spine (not counting the flared bolster--thicker at the flare). Condition is EXCELLENT--used but beautiful, with no problems to blade or handle. In one very key way, too, it's in BETTER than new condition; this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care. It's FAR sharper than when it was new and is guaranteed to thrill even the most jaded veteran user.

In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination.

This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E. A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
