In person none of these exist; we will say so in the description if it may be otherwise. It was made, however, using a MUCH older, pre-WW2 hand-forged blade that had been among thousands held in storage in Thiers, France and nearly forgotten when stainless steel brought its unfortunate revolution to the cutlery market. Its beautifully bolstered, beautifully grained rosewood handles and old-fashioned brass and steel birdseye rivets were applied and finished to make the knives saleable here in the USA by Au Nain, their maker, who even today is in business but no longer sells their fine wares in the USA. Of course, the company no longer makes carbon steel knives, nor hand-forges anything, but even today their brand is recognized as being head and shoulders above and beyond the normal French Sabatier fare.This is among the very finest French chef knives I've ever come across, maintaining the general profile of what the French lovingly call a "chef de chef, " or cuisine massif. " Even if you were blind and knew nothing of knives, you could be quite sure of one thing with great certainty: The fact that the "cuisine massif has been given its own name should help you understand just how highly-prized such a knife is in the pantheon of French chef's cutlery, and when it comes to this knife, rightly so. It has a number of outstanding details that differentiate it, but the true star of this piece is, in my view, the incredible performance it will deliver to the user; there is literally nothing it cannot do well in any kitchen, amateur or professional. From chopping anything from a chiffonade to splitting a 6lb. Grand-daddy lobster, to slicing some charcuterie or waferizing a clove of garlic, this is the ONE knife you take with you on that proverbial desert island and never look back.
Best of all, though, is the size of the knife; most "cuisine massive's" are found with a 12" blade, and are more than many chefs can handle, but this one should find the widest possible audience with its 10" blade (knife is 15.5" overall) that's an extra-wide 3" at the hilt for greatest possible knuckle clearance. At 22.5 ounces, of course, it's VERY heavy duty, with a 9/32 thick blade at the hilt, tapering to a very fine, very sharp point, but never feels unwieldy or clunky--just an amazing knife. It's found here in superb, little-used condition. As with all carbon steel blades, it must be kept dry during use or will spot and rust, but this minor inconvenience is more than offset by the superior performance it delivers, as any chef over the age of 50 will confirm. And collector's piece though it may be, it is a knife that was made to be used and I truly hope its lucky winner will do exactly that.The photos give you some idea of its appearance, but don't do nearly enough to convey the balance and feel of it or how useful a knife it really is--the final word in any kitchen argument. In short, the performance of this piece is as impressive as the appearance, and that is saying quite a bit.
