I picked it up at a local estate sale more than 20 years ago and was ASTONISHED when I did because I had never before seen a Japanese knife with bois d'arc handles; also known as osage orange, it's a wood normally found only in the American plains and south where it is prized not only for its beauty but also for its rot resistant properties ideal for fench posts, etc. Not only is the wood beautiful on this knife, however, but its handle is gracefully proportioned and slender, ideal for most sushi chefs using such a piece in a demanding professional environment. Its blade is equally graceful in its proportions and is more finely forged than any other gyuto I've yet seen. Notice how it tapers to a whisper by the time it reaches its point?
Yet it yields almost nothing in terms of flex--the combination of thinness and strength embodying the very essence of superb forging in a blade. It would be almost impossible to overstate the quality or beauty of what can only be described as one of the very finest chef knives you'll ever hold in your hand. Just look at it--a thing of beauty and a work of the cutler's art.
At 14.75" long with a 9-5/8" blade, you might expect to find a heavy knife, too, but this one weighs in at a VERY modest 5.7 ounces, further testament to its lightning fast potential in a skilled hand. As such, it's the PERFECT all-purpose chef knife for the chef who values a sense of "touch" in her knife--a GODSEND to any chef with smaller hand--though there is nothing small about its performance.It's just an amazingly fine blade, hand-forged in Japanese carbon steel of the finest quality, hand-honed RAZOR sharp enough to shave with. We've been unable to find someone to ID its maker for us so if you do know who made it drop us a line and we'll gladly add that info to this ad and give you credit for doing so. What is no mystery at all, of course, is the superb quality of this knife--off the charts. Blade is hand-forged carbon steel with a thin blade that is as stiff and strong as a hunting knife, perfect for cutting fish, cutting rolled sushi or any more traditional Western chores like dicing, mincing and chopping veggies, fruits, meats--you name it. Handle is bois d'arc, which is incredibly rare for a Japanese made knife of this type hafted over the wafer-thin tang using the old-fashioned birdseye rivets. Condition is used but excellent with no problems of any kind, ready to work at the highest levels the moment you take it out of the box. By any true measure this knife will thrill collector and user alike as something singular and something any owner would rightly come to think of as an heirloom.
