Unfortunately, the prospect proved wildly expensive and was more trouble than it was worth. Without a doubt, both knives are FANTASTIC.

Blade heat-treated 01 carbon tool steel of the very finest quality, hand-honed to a razor's edge with a truly triangular shape that is very much an homage to the old French knives about which so many of us are so crazy. Its blade is relatively thin and light but sacrifices nothing in terms of strength and agility; there is only the slightest flex. Its edge's radius-ground cutting geometry achieves the maximum sharpness possible, which it delivers in spades.As with any carbon steel knife, it must be kept dry to avoid rusting but this minor inconvenience is more than offset by the superior performance of carbon steel, as any veteran user can readily confirm. Its handles are beautiful myrtlewood, harvested in Oregon before myrtle was banned there for harvest, as it is today. Myrtle is, like beechwood, naturally water-resistant and will continue to darken and deepen in color and in lustre with use and touch.
Handles are bolstered in solid brass to give the knife excellent heft, then brass-pinned over a full tang, as warm to the touch as they are easy on the eye. The knife's one, purely aesthetic flourish is the inclusion of our signature mosaic pin anchoring the handle closest to the pommel. It's geometric form is suggestive of an ancient Celtic knot but any chef will be forgiven for thinking it merely looks pretty cool.
