PLEASE NOTE: We take our photos in natural light outdoors and as a result there are sometimes reflections or shadows or glare shown in the blades. In person none of these exist; we will say so in the description if it may be otherwise. Please read our Terms below for details. This superb quality chef knife is an exceptional find by any standard, coming here in the quintessential French chef knife size, measuring 14-3/8" long with a 10" blade.

This is the largest chef knife made in this pattern and the rarest, doubly so in this ultra-fine UNUSED condition. Despite being well over 100 years old this knife has lain in storage for DECADES so it could meet you here in the scary future of 2020, either for use as the greatest chef knife you've ever held in hand or as the new centerpiece of your collection. For any serious chef it's the only knife they'll ever need--the most important tool in every kitchen, amateur and professional alike. Obviously, its most outstanding feature is the incredibly beautiful rosewood handles pinned with old-fashioned birdseye rivets over its full and fatted tang in a very unusual pattern that features heavy carbon steel bolsters at both ends.

I date the piece to the 1880's-90's, though it could be even older than that; the fatted tang preceded the tapered tang in the evolution of hand-forged technology, though there were plenty of exceptions and overlaps. The rosewood is, as you can see from the photos, beautifully figured, weathered and patinated, without any of the condition problems that so often bedevils these knives--just 100% whole and wonderful.

Its maker's marks are one of the finest cutlery marks ever to grace a chef's knife, Sabatier's "Jeune, " with the grape-cluster and letter K with a crown logo. It's one of the most deft and solid Sabatier knives I've ever seen and I've seen more than a few. The genius of its handle doesn't begin and end with aesthetics: it's also a comfortable grip, made to be used, not just gazed at from behind a glass wall. It will slice, chop and dice as well as any knife you've ever used, and probably better. Despite its relatively modest footprint, it's also incredibly hefty and strong, weighing in at an impressive 9.2 ounces and fully capable of dispatching the largest pile of onions into teeny morsels.

It tapers to a particularly fine point, useful for a myriad of applications. It would be difficult to overstate its quality from either a functional or an aesthetic viewpoint.

A unique opportunity to elevate your own collection above and beyond, but not one likely to repeat itself anytime soon. An OUTSTANDING knife for user and collector allke, and a true trophy in any chef's arsenal and an heirloom centerpiece in any collection.
