It was made with a carbon steel blade that was entirely hand-forged in France, 14-3/8" long with an 9-7/8" blade that's 1.25 wide at its hilt, constructed with an integral tapered tang and bolstered not in the elongated French style but more in a German style, sometimes called a Canadian knife. It is hafted in triple-brass over a full and tapered tang with gorgeous rosewood handles of the very highest quality. In comparison to what's available at your local mall--black plastic handles on blades made of inferior recycled stainless steel i. Washing machines, Hyundais and re-bar--there is no comparison at all. As impressive as its obvious beauty and craftsmanship are, it's a knife that will impress most of all by virtue of its supreme balance and feel in the hand.

Vintage Gonon-Gironde knives are among the finest and most beautiful of their kind ever made in France, with craftsmanship to rival any maker. Like most of the small family-owned and operated cutlery manufacturers of France, the company has struggled for years to stay alive and no longer distributes their fine products in the United States, which is truly a shame. As you can see, in terms of materials, craftsmanship and detail, it represents the epitome of the cutler's art and is offered here in pristine condition. Like all carbon steel knives, it must be kept dry, even during use, and with time it will discolor gradually.

But this minor inconvenience is more than offset by the superb edge maintenance and performance offered by carbon steel, as any experienced chef or butcher can confirm and a carbon steel renaissance is under way these days in gourmet cooking circles with a new vanguard of chefs and cottage livestock purveyors recognizing and even evangelizing the value of carbon steel blades. Interestingly, it's very likely that the blade in this knife was hand-forged and forgotten in France sometime before the start of WWII--a very common occurrence at a time in the cutlery industry when stainless steel knives were beginning to revolutionize centuries-old business practices.

Its beautiful handle is as warm to the touch as it is easy on the eye and rewards the hand with a greater affinity than the ubiquitous black plastic found on most knives these days. This knife is, of course, the one every chef will turn to when presentation requires precise and accurate slices of anything from Thanksgiving turkey to charcuterie to onion or tomato. Unlike German-made slicers of this size, its triangular profile enables it to be used much in the way one uses a chef knife, enabling you to do a fast chop with precision and speed. For this reason the French have bestowed a special name for such knives and in France it would be known as a trenchelard. You can be sure that once the French have given a knife a special name it has achieved a kind of respect reserved for only the chosen few!
