It is hafted in triple-brass over a full and tapered tang with gorgeous rosewood handles of the very highest quality. Interestingly, it's very likely that the blade in this knife was hand-forged and forgotten in France sometime before the start of WWII--a very common occurrence at a time in the cutlery industry when stainless steel knives were beginning to revolutionize centuries-old business practices.Its beautiful handle is as warm to the touch as it is easy on the eye and rewards the hand with a greater affinity than the ubiquitous black plastic found on most knives these days. This knife is, of course, the one every chef will turn to when presentation requires precise and accurate slices of anything from Thanksgiving turkey to charcuterie to onion or tomato. Unlike German-made slicers of this size, its triangular profile enables it to be used much in the way one uses a chef knife, enabling you to do a fast chop with precision and speed. For this reason the French have bestowed a special name for such knives and in France it would be known as a trenchelard.
