I've honed my own knife to a straight-razor's edge, but have left this one alone in the event anyone out there wants it purely for collecting purposes (THIS is a knife worthy of such consideration, and it is VERY sharp already from the factory). Made in Solingen, Germany by Friedrich Herder and Sons, it's full of the kind of expensive, labor-intensive detail that ultimately contributed to the demise of this once-dominant maker of fine cutlery of every description (they've actually been reborn, but their products no longer shine as they once did). Unlike today's mass-produced, hot-drop forged blades i. By machine, this knife enjoys a fully hand-forged blade made from superior virgin steel.
As such, it is quite superior to that made today by any but the most demanding custom cutlers. I estimate the age of the blade as anywhere from late 1800's--early 1950's. Handles are clad with thick scales of sambar stag, like a fine Puma hunting knife, with heavy-duty brass bolsters over a full tang, VERY comfortable in the hand with a comfort and control that eludes most knives.Especially telling is that it has a full and tapered tang for maximum balance, and a measure of fit and finish more akin to that of a hand-built Rolls Royce than a robotically assembled Lexus, if you know what I mean. You will not soon forget the feel of such a knife, once held. A collector's piece though it may be, it would be an utter shame not to use it daily. It's long, clipped-point blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Measures 12-7/8" with 8.25" blade, but its beauty and balance make it come up HUGE for any job in your kitchen, large or small.
It's ready to serve a useful lifetime of slicing wafer thin anything and everything for which you choose to use it, but if you just want to display it among your collection's finest, we won't tell!
