This superb chef's knife was made in France by Sabatier for sale under their classic and high-end K line of cutlery and when it comes to French chef knives with a stainless steel blade, there have never been finer. For the sake of this sale we've had this one professionally edged to a RAZOR sharpness that very few knives ever achieve. We urge the utmost in caution or a careless user may find himself in the E. There are few words which adequately describe this superb piece more than just plain Wow!

It was expertly hand-forged and given what's known as a Nogent-style handle, a mangificent French design named for the legendary knifemaking city of the same name, near Thiers, that uses a rat-tail tang below the blade (tang, flared bolster and blade are one piece) to pierce the ebony handle, with a white brass ferrule at the bolster to provide added strength. The great deal of labor that goes into this design (my personal favorite for a vintage chef's knife of any configuation) favors a higher degree of balance and, in my humble opinion, true craftsmanship and beauty in a chef's knife. The casual observer will say something like, but it isn't all one piece like those Henckels knives I see at Bloomingdales!

THIS design was the pinnacle of craftsmanship in chef's cutlery and was all but completely abandoned after WWII in favor of today's designs, which were far easier to mass produce. These, however, required one guild to forge the blades, another to finish them, another to make the handles and the "hafter's guild" to fit them all together. If you're someone who knows the FEEL of fine knives, you won't have to use this knife twice to understand what it's capable of, and you will experience nothing short of a revelation of performance and balance. It's a transitional knife in the history of Sabatier knives, because it employs this older construction style with a stainless steel blade. Many chef's prefer a carbon steel blade, especially when hafted to a Nogent handle, but many chef's also work in counties that prohibit the use of carbon steel blades, due to (what amounts to superstitious) health codes.

If you're one of those chefs, or just someone looking to own one of the finest knives ever made, this knife is for you. In this size--14-5/8" long with a 9.75" blade--it's the quintessential French chef knife, more than capable of delighting any hand, large or small. Despite this size it weighs in at a delightfully deft 7.8 ounces. Of course, as you'd expect, it will shave WAFER-thin slices of charcuterie, tomatoes, onions, or anything else, but it is first and foremost a chef's knife for chopping, mincing, dicing, for which it is ideally suited, thanks in large part to the triangular form of its massive blade. Here's your chance to acquire what user and collector alike will rightly come to think of as an heirloom.
