Stamped on its hand-forged blade, "RUSSELL, GREEN RIVER WORKS, " along with the company's old diamond-logo and constructed with a dark and gorgeous oldgrowth rosewood handle over a full and tapered tang, this beautiful vintage chef knife has everything going for it one could hope and more in terms of size, quality materials, construction, craftsmanship, but especially performance. As you can see in the photos it has been used and sharpened extensively--but properly--and it remains rock solid in every way. It should also be obvious from the photos that at some point in its history a previous user used it extensively for citrus, tomatoes or some other highly acidic foods; the deep grooves worn into the blade now, however, resemble forge finish, something Japanese makers leave on the upper portion of many blades to retard rust.
I mention this only in the interest of full disclosure but when you use it I want you to be aware that what some might consider a drawback of this knife can actually function to its noticeable advantage. At 19-3/8" long with a RAZOR sharp 14-1/8" blade it's also the largest size they made, and whether you're shopping for a superb knife to use or just a stunning addition to your collection of fine cutlery, you'll have to look far and wide to find a better one by any maker. I own well over 100 chef knives by Russell in my personal collection but only ONE like this. To say it's a bit of an outlier would be an understatement. Most notable about it, in my view, is its shape.
Notice its gracefully arched top of the blade, which closely resembles the form a Japanese gyuto, the hybrid Western-style/Japanese chef knife that is so popular today, though this knife was made well over 100 years ago and couldn't possibly have foreseen that trend. And also like a fine gyuto, it is as lithe and agile as a panther, weighing a modest 10.8 ounces, despite its great length, sacrificing nothing in the way of strength or rigidity in the process.
This quality, of being strong and thin is the very essence of superior forging and heat-treating of a blade and this knife has this quality in spades. Like all Russell knives of its era it was manufactured to last a lifetime by men and women who took extra pride in their craftsmanship. It's large enough to dispatch with extreme prejudice just about any job in your kitchen, amateur or professional, from reducing a 50lb. Bag of cabbage to coleslaw to slicing paper-thin turkey breast for a sandwich.Overall look and feel of this knife are excellent, even a bit better than it looks in photos. Handle is tight, solid and completely free of cracks or looseness, employing three brass pins to keep it tight. Obviously, this knife has considerable collector value, but it'd be a shame not to keep using it. If you've never used carbon steel knives before, you're in for a treat.
Only a true carbon steel blade can consistently attain the razor-sharp edge that makes using it a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Of course, if you merely wish to brandish it at your next pig roast or for Thanksgiving carving, we promise not to tell!
