Henckels of Solingen, Germany, this is a very special vintage piece, found here in the largest size they ever made, brimming with all one could hope to find and more: design, materials, craftsmanship, size, condition and especially performance. This beautiful chef's knife comes hand-forged with integral carbon steel blade/bolster/tang construction, very thick and heavy duty at its center of gravity but whisper-thin by the time it tapers towards point and pommel.It was hafted with African ebony handles triple-riveted over a full and tapered tang with unique birdseye rivets--as warm in the hand as it is easy on the eyes. It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing, and is RAZOR sharp right now, ready to begin a new lifetime of outstanding performance for even the most demanding of chefs. For this sale we've had it professionally edged by the good people at Ross Cutlery in downtown Los Angeles, the best in the business. As such, it's FAR sharper than when it was new and is guaranteed to THRILL. Condition is flawless, as the photos show. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance!
Despite the knife's enormous size (20" long w/14.25" blade that is an extra-wide 3 at the heel) this knife is perfectly balanced and never feels clumsy or clunky. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding, and there is nothing you can't do.
The blade is stamped, J. Henckels Twinworks, Solingen, Germany, " with an additional stamps reading, "108-14, " "as well as, Grand Prize, St. Louis 1904, Paris 1900, indicating that this design was a prize-winner at those expo's. While this incredibly fine piece will readily serve as the centerpiece of most cutlery collections we hope its lucky new owner will use it, too. It's ready to serve a useful lifetime of dicing, chopping, slicing and generally making fast work of whatever you put in its way.
It has a MUCH more finely tapered blade than most and is a speed demon in capable hands. You might not be aware that Henckels knives began to use recycled steel stock in 1987, but this knife was made from virgin steel many, many years prior to that, at a time when the company was fully worthy of their reputation for excellence. In fact, it was hand-forged, as evidenced by its tang, which tapered more thin toward the bottom, for greater balance in the hand. The difference in quality may surprise you.
It's what you should expect from one of Germany's finest cutlery makers and it really is much more beautiful than today's composite-handled equivalent. Whether you are a professional or amateur chef, you'll instantly come to love this magnificent vintage knife as one of your very favorites.
