From one of the finest cutlery companies in the world, in the largest size they ever made, comes this outstanding professional-quality chef's or baker's slicing knife from Guelon, distinguished by its logos of a fireman running with a ladder. This mark is of some interest because Guelon was trying to suggest the very fine knives made in Thiers-Issard's old "L'Enfer" line, which featured a devil running with a knife, but sometimes used a chef with a knife or a fireman with a ladder when exporting to other countries. Regardless, it has EVERYTHING you could possibly want from it in terms of rarity, materials, craftsmanship, size and condition. On top of all that it has one more quality that stands out above all others--the fineness with which it was forged, especially near the tip of the blade where it is slightly flexible.Just TRY finding a modern kitchen knife like that in ANY size made today, let alone in this massive size; it just isn't done because doing so requires good old fashioned skill and craftsmanship and those things have been all but made extinct by the economic realities of mass production. Though it has been used, it still is in truly outstanding condition, as the photos show, with no problems of any kind. It was made in Thiers, France with a RAZOR sharp, hand-forged carbon steel blade with integral bolster/taperd tang with a handle made from a gorgeous African ebony, warm to the touch and very easy on the eyes. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. Like all fine carbon steel blades, it will accept a razor sharp edge the likes of which most chefs are unprepared for--truly a new level of performance for the unitiatated. It is RAZOR sharp now and is capable of shaving a man's face.
It's ready to perform a lifetime of outstanding service working its way through the most tedious jobs in any kitchen, professional or amateur. It was beautifully polished and ground in the shape of what's called alternately a ham knife, a roast knife, a salmon knife and sometimes even a baker's sheet cake knife. Its numerous uses in any gourmet kitchen, amateur or professional only multiply its value, and whatever tasks you may put it to will multiply your satisfaction with it. With a single stroke, it's capable of cleaving, carving or slicing whatever is foolish enough to get in its way.
Will shave PAPER-thin slices of turkey, roasts, hams or anything else, and its rounded tip is perfect for serving from a carving station. The piece enjoys an extra measure of refinement, and it would look appropriately spiffy at even the most refined table. Has a 14-1/8" blade (it's 19-5/8" overall) but this knife is FAR more agile and beautifully balanced in your hand than this whopping length might indicate. It weighs in at only 6.9 ounces, enabling any chef to wield it with skill and precision. A rare find, especially in carbon steel, doubly so in this condition, trebly so in this size.
