In person none of these exist; we will say so in the description if it may be otherwise. This VERY fine old knife was made by Gustav Emil Ern in Solingen, Germany and you will not find a finer one anywhere--nor a sharper one.
For the purpose of this sale we've had it professionally edged by the good people at Ross Cutlery in downtown Los Angeles and as such it's now FAR sharper than it was when new and FAR sharper than most knives ever can be. It's an older piece by Ern, too, as evidenced by its stamped (rather than etched) markings and also by its full tang. You might not be familiar with the Gustav Emil Ern name, but their knives and other chef's tools have been well-known and respected by chefs and butchers the world over, especially in Europe, and their quality is easily on par with comparable makers like F. Dick, Henckels and Wusthof, and in some ways better. They're also a company that is, sadly, no longer among the living, as of just a few years ago.
It is a knife to be reckoned with whether carving roast beast or using it to split entire sheets of cake in half across their thickness. Like all carbon steel knives, it must be kept dry, even during use, but this minor inconvenience is more than offset by the superb edge maintenance and performance offered by carbon steel, as any experienced chef or butcher over the age of 50 can confirm.
To say the least, this is a VERY long knife that will be too much knife for most users but for one lucky user it will be the RIGHT knife. Such a person will inevitably work in either a professional kitchen where carving some of the largest roast beasts on the planet is a daily reality or they will be involved in a world-class patisserie, baking and decorating sheet cakes of every description. Turkish and Middle Eastern chefs will instantly recognize this knife's value for carving from a vertical spit in the preparation of doner kebab, shwarma or gyro plates and sandwiches.
Made with a whopping 14-5/8" blade (19-5/8" overall) this knife is found here in superb condition. As the photos show, it appears to have been used very little, if at all, with no discoloration on its carbon steel blade and not a blemish on its beautiful old-growth African ebony handles--rock solid in every way and ready to last several more generations if properly maintained. NOTHING will do a better job at your next pig roast, or for serving prime rib from a carving station. Thanksgiving turkey breast will carve with ease like never before, and this knife more than most will demonstrate convincingly that when it comes to slicing or carving, longer is definitely better.
Of course, meat-carving has no monopoly on such a knife and anyone involved in cakes will be equally enamored of it. Its length and flexibility permit splitting an entire sheet and it serves equally well in large-scale spreading and frosting. It's beautifully balanced in your hand, with a grip that's warm to the touch and easy on the eyes. You'll instantly come to love this beauty as one of your very favorites.
