It's original purpose was for breaking down a quarter or side of meat into steaks, chops, roasts and other retail cuts of meat but knowing chefs have always prized knives like this for anything from carving a Thanksgiving turkey to serving birthday cake, as well. At 19-5/8" long with a 14.25" blade it's got all the size you'll ever need and its blade is perhaps the stiffest, thickest and most sturdy I've ever seen on such a knife--all hand-forged from the finest carbon steel, with a full and tapered tang. As with all carbon steel blades you must keep it dry to prevent it from rusting but this minor inconvenience is more than offset by the superior performance, edge retention and ease of edge maintenance delivered by carbon steel, as any veteran user can readily confirm. Handles are the finest African ebony with a brass pommel, riveted over the full and tapered tang using the old fashioned iron-inside-brass birdseye rivets. As warm in the hand as it is easy on the eye, this handle was made to tell the world that this knife was produced for someone of unusual success and artistry in the kitchen. In fact, it still does. For this sale we've had the knife painstakingly edged to perfection by the good folks at Ross Cutlery in downtown Los Angeles, the best in the business.
