You won't be finding one of these at the mall (or anywhere else) anytime soon. With its PURELY French design, solid fruitwood (probably some kind of pearwood) handle, steel-pinned hahdle and RAZOR sharp carbon steel blade, this beautiful knife is hand-forged in a design that has LONG been favored by French chefs and butchers for its versatility, ease of maneuverability and comfortable grip. Years ago, every maker in France produced one similar, but none finer than this. It bears a very old French mark of a blacksmmith's anvil and hammer, with only the name of its maker, Bargoin.

It pre-dates the use of the Sabatier name in cutlery making in France. Most mass makers of cutlery in France got their start by using pictographic logos which enable a chef (usually, illiterate) to order without having to read.

"Give me three Anvils, " he might ask a purveryor, or, Two elephant paring knives. As such, there's no way to date it precisely, but its hand-forged blade, its steel pins and its overall quality would indicate late 19th Century/early 20th Century and probably no newer than that. Regardless of its exact age, its performance and quality are timeless. The knife has a full, razor-sharp 9" blade and measures 14-5/8" overall--a size that makes it especially nice for chopping and slicing, but absolutely perfect at cutting steaks and trimming meats. Handle is in REMARKABLY good condition with no chips, cracks or looseness at all.

The entire piece has been rubbed almost smooth by many years and the touch of a thousand hands, giving it the kind of glow--a patina--that simply can't be duplicated. If you've never used a knife like this before, you're in for a treat. Its carbon steel blade takes a razor's edge easily, unlike today's overly-hardened blades, which nearly require you to be a blacksmith to re-hone.

The most outstanding quality of the knife is, though, the comfort and balance it enjoys in your hand--ergonomics meets classical antique. Like all superior chef's cutlery, it feels like it belongs in your hand. There was a time when every serious kitchen in France had at least one knife in this style, but times have changed. If you appreciate the beauty and functionality of a great knife, YOUR time has come to acquire what will soon become one of your all-time favorites--a piece you'll rightly come to think of as an heirloom.
