In person none of these exist; we will say so in the description if it may be otherwise. This superb vintage chef knife is over 60 years old, yet has never been used. It has picked up some spots of discoloration from decades of storage but still it's 100% in every way. For the purposes of this sale we've had it buffed and professionally edged by the good folks at Ross Cutlery in downtown Los Angeles, one of the best in the business, and it's now FAR sharper than most knives ever can be--GUARANTEED to thrill. It was produced in Maniago--Italy's cutlery-making capital--by Ausonia, a company that only briefly imported their wares into this country but which enjoyed a broad and SUPERB reputation in Italy itself and throughout greater Europe.
It's a medium-sized knife (8.5" blade, 13-3/8" long overall) made with just the right amount of heft for it to serve as the main chef knife for smaller hands or as a blazingly fast light-duty piece for larger ones. Like their collector counterparts, any professional chef would be DELIGHTED to own and use such a fine, professional grade piece of cutlery. It was made with beautifully grained genuine cherrywood handle scales fixed onto the full and tapered tang of its entirely hand-forged blade, using the old-fashioned birdseye rivets.Though its blade is shiny like stainless, its blade is carbon (non-stainless) steel, and it WILL rust if not properly maintained. This minor inconvenience is more than offset by the superior performance of carbon steel, as any chef over the age of 50 can tell you.
Most desirable about this piece, in our opinion, is its double-convex, radius-ground edge, which can attain the sharpest possible cutting geometry when finished. Surprising to many younger buyers will be the fact that the edge was not at all sharp when we obtained this knife, though it is sharp now, haivng been edged for this sale.
In the old days many professional chefs preferred to receive their knives unfinished in order to apply their own edge, and they did not consider a knife fit for use until they had a chance to do so.
