This is an absolutely stunning antique piece of exceptional quality, still in perfectly useful condition, offered in a style of sharpening steel, known in the meat-cutting trade as a Balkan Steel. Made in Germany probably sometime in the early-mid 19th century, it's signed with its maker's name JG Heiss; though I've been unable to learn anything about this maker I've seen a few of their knives over the years to know it's a German piece. In terms of materials, craftsmanship, condition and size, this steel have everything going for it one could hope for and more. As photos show, its flattened beavertail shape, very finely ridged, make it ideal for honing the finest knives in the world.With a greater surface area upon which to expose your knife's edge, the steel does several times the work of a round, traditional steel with each and every stroke. The handle is mainly an extension of the steel, clad in brass with a forged steel pommel and brass rings that permitted the steel to tie onto the apron strings of the chef or butcher who carried it (in the old fashion, dangling from his side), making this a masterpiece in every sense. To say the least, this is a special steel and will function as beautifully as it looks. Also nice is the size of the piece; most Balkan steels are very long but this one is much more modest, measuring 12" long overall (including the ring) with a 7.25" steel, 1-3/8 wide. It may very well have been made for use by a maitre'd, for carving in cramped spaces like at tableside, for dishes like chateaubriand, beef wellington and the like.
No one's making Balkan steels these days, owing to the enormous cost of manufacturing, but here's your chance to pick one up that's as functional as it is beautiful.
