The handle is tight to the full tapered tang, and has been oiled. A light coating of food grade mineral oil has been applied to the blade for protection. Sabatier Style 13.75 Guelon France Chef Knife. This is a vintage French carbon steel chef knife, commonly referred to as a "Sabatier" style, though Sabatier was the name of a distributor. Guelon is a common French name. I do not know if the brand of this knife is Guelon or if that was a town where it was manufactured. There is a story from way back when that a certain French knife distributor chose, I think as part of local humor, to use a small devil, running with a knife, as a logo.As the story goes, puritanical America wanted nothing to do with that, so the blade logos quickly changed to odd variations of the same theme, which is what I believe is seen here. Now the knife has a logo with a fireman running with a ladder. The blade on this knife is 13.75" with an extra long OAL of 19". At one point this knife may have been 16 but has been sharpened down because of a broken tip. Blade now has a rounded tip which can be seen in the photos.
Knife has very light scratching from hand washing and sharpening stone over the years, and light pitting and spotting which is pretty common in knives of this age.
