Measuring 14-5/8" long, with a 7.25" by 5.5" blade, this beautifully preserved chef's or butcher's meat cleaver is stamped, "FULTON TOOL CO. " with the number "2/0, which would have been its size number. It has an additional stamping of "55" on its blade near its bolster and again on its handle on just the other side of its bolster but I have no idea what those stampings signify. Believe it or not, despite its very substantial heft and size, this was one of the SMALLER sizes the company made at the time. The company would go on to produce smaller cleavers but in their earliest years this was considered "lighter" goods. It was made sometime in the late 19th/early 20th Century for use, most likely, in one of the vast meat processing facilities that once surrounded the New York City area. Larger sizes of Fulton cleavers were used like a 2-handed ax to slaughter livestock with a single blow remember that scene from the movie Apocalypse Now? , or to split the carcass of a steer along its length.

For this reason, and because those handles were usually made of turned wood, this style of cleaver eventually came to be known as a bat. " This VERY impressive cleaver, though, will still be the last word in any argument any modern chef or butcher is likely to have with even a very large cut of meat with one deft and sudden, "WHOOMPHH! The piece is in overall beautiful condition, as you can see in the photos, with a glowing patina derived from the passing of many years and the touch of many hands. Blade is hand-forged carbon steel of the highest quality with a full hidden tang, edged to just the perfect amount of keeness for this sale.

Handle is made of solid, premium grade cherrywood that's beautifully grooved for traction on your hands, with the rat-tail tang of the blade peened over at the end, capped with an iron pommel disc. Best of all, I think, is the grace and beauty with which cleavers like this have been bolstered. It utilizes a VERY thick iron collar (the steel is 1/8 thick) which has kept the enormous head fixed tight and strong for over a hundred years--I have no doubt you could use this item without fear of failure or breakage for another generation or two or three, despite its obvious age.
