From one of the finest cutlery companies in the world comes this extra-wide chef's master carving knife from J. It's 17.75" long with a blade that's 12.25" long and 1-5/8 wide, RAZOR sharp in a way that very few knives ever are, having been professionally edged for this sale. This beautiful knife comes with an incredible hand-forged blade with Nogent-style handle, a mangificent French design named for the legendary knifemaking city of the same name, in France, which uses a rat-tail tang to pierce tha handle, anchored with a corresponding hooked tang rod inserted from the bottom, with an iron ferrule at the bolster. This design (my personal favorite for a vintage chef's knife of any configuation) favors a lighter-weight, higher degree of balance and, in my humble opinion, true craftsmanship and beauty in a chef's knife.

The blade is stamped with one of the company's older marks, indicating an age of pre-WWI, crisply stamped, Germany, J. Henckels Solingen, Zwillingswerk" and "Max Wertheimer, New York, which is the name of its original importer/distributor.

In terms of its materials, craftsmanship and quality, it's as you'll find anywhere, at any price, and fully equal to the antique Sabatier knives that inspired it (without a doubt, Henckels made this knife to poach customers away from Sabatier). Condition is used but excellent, as you can see in the photos, with no problems of any kind. It's the ideal knife for slicing WAFER thin anything unfortunate enough to get in its way. It's WHISPER thin near the tip, yet strong and flexible. Its blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing. Indeed, it is RAZOR sharp now and will easily shave your arm. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
