This beautifully patinated piece of vintage cutlery is a rare and highly-desirable piece of history and one with so much going for it it's hard to know where to begin.Though it is 100% Russian in its heart, through and through, it's a piece that was actually made (sometime in the early-mid 20th Century) in the style of what was known as a Swiss Cleaver. This is an even more rare piece in that it was produced in the old Soviet Union during the reign of Josef Stalin. When found in this large size, it would have been called an Elephant Ear and as you can see from the photos, with good reason. And when chefs go to giving their knives special names you can be sure it is because they are treasured, and that should surprise no one who has ever used such a knife as this. This fine blade was entirely hand-forged from some of the finest carbon cutlery steel ever produced for use in the kitchen.
We've had it p rofessionally edged for the purpose of this sale by the good people at Ross Cutlery in downtown Los Angeles, one of the best in the business, and as such its edge is now so frighteningly sharp that we guarantee it will thrill even the most jaded veteran users--FAR sharper than when it was new. We urge the utmost in caution of a careless user will find himself in the E. Handle is a solid chunk of very fine quality beechwood, joined with an iron ferrule, as you can see in the photos. Most remarkable about this piece is that the handle is entirely free of any cracks, chips, hairlines or other problems that so often bedevil pieces of this construction. It has acquired a deep patina that is the result of the passing of many years and the touch of many hands--just gorgeous.
Cleavers of this sort are not made at all these days because the style of its construction is quite labor-intensive and requires considerable craftsmanship and extra hand-finishing (and honing--it's sharpened all the way around to the point at top of blade to permit chopping, slicing AND scraping in a push motion) and uses a much larger piece of expensive blade-stock. It's shape makes it as adept at slicing and cutting meat as it is for your toughest cutting and chopping. It's size is deceptive, and it is much more maneuverable and agile than you might think, despite the fact that it measures a whopping 15-3/8" long with a blade that's 9.75" long and 4.5 wide. Though made for whacking chops, steaks or poultry parts from a larger piece of meat, it's beautifully balanced and excels at finer mincing and dicing, leaving even some very pricey oriental cleavers in the dust, in terms of performance.For most western users, it will be a first; it's much more like a chef's knife than what we in America think of as a cleaver, which tends to be thick and clunky, like an ax. If one opts to use it--and I sincerely hope one does--there should be no doubt that this piece will serve faithfully for another few generations, if properly maintained.
